Cottage Cheese Alfredo Sauce

My creamy alfredo sauce has all the protein and flavor. I used the traditional flavors of garlic, butter, and parmesan cheese with the addition of cottage cheese to create this tasty sauce.
Now you don’t have to avoid alfredo sauce because it’s too rich, but replacing some of the butter with cottage cheese and the texture of the blended cottage cheese adds so much flavor and creaminess. This sauce is perfect with chicken and broccoli, but it would also work topped on salmon and shrimp and other seafood, I’m sure.
The other benefit to a high protein sauce is that it’s filling and you will not feel the need to go back for seconds. Which, if you are trying to manage your weight this type of meal that will keep you full or a long time. For all the perimenopause/menopause/post menopause women out there, or anyone trying to keep their blood sugar in balance, this is delicious and filling. Cottage Cheese Alfredo Sauce
Ingredients
- 16 oz cottage cheese , whipped in food processor or blender
- ¼ cup melted unsalted butter
- ½ cup parmesan cheese
- 3 tsp garlic powder
- 1 tsp salt
Instructions
- Melt unsalted butter.
- While the butter is melting, add cottage cheese to food processor or blender, and mix until smooth.
- Add cottage cheese, parmesan cheese, salt, and garlic powder to pot.
- Lower heat and let simmer for 20 minutes. At 20 minutes check the consistency of the sauce. It should be getting thinner. Let simmer for less or more time depending on how thick you like the sauce.
- Goes well with chicken and broccoli
