Roasted White Bean Dip

This is a super easy and nutrient dense dip that is good enough to take to any party or to make for yourself. Between the beans, roasted garlic, and other yummy ingredients, your friends will be asking you for the recipe.

Ingredients

  • 1 can cannellini beans (15.5 oz)
  • 2 cloves garlic
  • ¼ cup + 1 tsp olive oil
  • 3 tbsp lemon juice
  • ¼ cup pecorino Romano cheese
  • ¼ tsp paprika
  • ½ tsp salt

Instructions 

  • Roast the garlic with 1 tsp olive oil for 15 minutes at 350 degrees
  • While the garlic is roasting, drain the beans and add to the food processor
  • Add lemon juice, olive oil, cheese, paprika, and salt to food processor
  • Take the garlic out of the oven and add to the food processor along with the oil it was roasted in.
  • Turn on food process and mix until a creamy consistency is achieved
  • Enjoy with roasted veggies
