Roasted White Bean Dip
If you need to take something to a get together, nothing beats this roasted white bean dip especially when you pair it with roasted vegetables, like the broccolini, pictured. It’s creamy, quick to make especially when you make with canned beans. This dip packs plenty of fiber, and even more when you pair it with roasted vegetables. So, even if you don’t know all the food that will at the party, you can feel good about not only bringing this one but eating it too.

It can be hard to go to parties when you are trying to eat healthy. So, this is a good option, that is not only healthy but tastes good too. It’s a little creamier than hummus and it is also a little more mild.

Roasted White Bean Dip
This is a super easy and nutrient dense dip that is good enough to take to any party or to make for yourself. Between the beans, roasted garlic, and other yummy ingredients, your friends will be asking you for the recipe.
Ingredients
- 1 can cannellini beans (15.5 oz)
- 2 cloves garlic
- ¼ cup + 1 tsp olive oil
- 3 tbsp lemon juice
- ¼ cup pecorino Romano cheese
- ¼ tsp paprika
- ½ tsp salt
Instructions
- Roast the garlic with 1 tsp olive oil for 15 minutes at 350 degrees
- While the garlic is roasting, drain the beans and add to the food processor
- Add lemon juice, olive oil, cheese, paprika, and salt to food processor
- Take the garlic out of the oven and add to the food processor along with the oil it was roasted in.
- Turn on food process and mix until a creamy consistency is achieved
- Enjoy with roasted veggies
